bread in muffin



I made some bread the other day.

the recipe for the dough goes as follows

Bread recipe is a simple bread recipe. Start with
  • 2 (8 g) packages of rapid rise yeast
  • 1 cup of warm water
  • 2 tsp maple syrup
Let sit for 5 min, till a creamy foam

Fill a big bowl with 7 cups of flour, than add

Combine:
  • 2 tb, olive oil
  • 3/2 tsp salt
  • 2 eggs
  • yeast mixture
Knead for 7-10 min, till it has formed together. Than let sit and put in bowl with some olive oil and a damp rag on top. Let it sit till it doubles, around an hour. Punch down and let rise again.

I than divided it up into 2 tbs balls.

i added some of
  • garlic (smashed, diced)
  • maple syrup
  • salt/pepper
  • Parmesan cheese
  • pesto
i than put them into the muffin cups, and baked in oven at 350 for 20ish minutes...till tops looked like this.

cornbread...



so i made chili...which i will post later and of course i needed to make cornbread. It was the perfect side to some tasty chili or really anything.

it was pretty simple...except trying to find cornmeal in denmark is REALLY hard.

start by mixing
  • 1 cup of flour
  • 1 cup of cornmeal
  • 2.5 tsp of baking powder
  • 1 tsp of salt
then stir in.
  • 1 cup of milk
  • 1/2 cup of sugar/sugar syrup/maple syrup
  • 1 egg
  • 1/3 cup of butter/veggie oil
now pour this mixture into a greased baking pan. around square 9 inch could work great.

put in oven at 400 F for 20-25 min.

pizza again!!



Such a simple pizza for a hungry set of studiers. we used my pizza dough. than coated pizza with
  • tomato paste
  • tobasco sauce
  • diced red peppers
  • diced mushrooms
  • finish it offf with a touch of mozzarella cheese
and put in oven at 350 F for 15ish min. Or till cooked.

simple pizzas



these pizzas were still made with the same dough as before. The toppings were really simple
  • tomato paste
  • tobasco sauce
  • sliced mushroom
  • bacon
  • mozzarella cheese
and one also has some rucola, thats the green stuff.

They were sliced up and eaten up super quick.

Brie and Honey Pizza



With the same pizza dough i used the other day. the recipe is here. I decided to finish to create a little special pizza for dessert. well cheese dessert mixed into one.

Basically
  • rolled out pizza.
  • painted honey all over pizza
  • put in oven at 350 for 5-10ish min (till semi cooked)
  • coated with a litte more honey
  • placed cut up brie/camenbert cheese on pizza
  • gave it another 5 min
took it out and was super happy. One of best little work for tasty reward recipes i have done.

winey salami rolls


Using the same dough as yeterday. i decided to play around again.

I did all the same steps as before, rolling it out and such, but the filling was a bit different.

For it i
  • diced up some salami and put into sauce pan at med
  • added red wine
  • sugar syrup
  • cayenne pepper
  • salt/pepper
and let it all cook together a bit. Than once it was a little thicker, and most of wine had steamed off i put it onto the flat dough and rolled it up.

Again i topped it with some egg/milk/sugar syrup mixture to give nice brown top.

Pretzle Mania


So this recipe took some time, but was so delicious and you can have some fun with it at the end.

Firstly, in a small bowl add
  • packet of active dry yeast
  • 1 c of warm water
Combine
  • 3/2 c of flour
  • 1 tb sugar
  • 1/2 tsp salt
  • 2 tb oil or butter
Combine with yeast and stir well, than proceed to add
  • 5/4 c of flour
Knead all this for 3 min, and into a ball. Put in bowl cover with damp towel and let sit for an hour, or till its doubled in size.

Now you have your dough, and devide them up as you will. I devided mine into 10 or 12 peieces, and proceeded to roll them out long and thin, than to have fun. I also added
  • maple syrup
  • parmesan cheese
  • olive oil
  • salt/pepper
  • chocolate/ sugar mixture
to all of it, and had some fun and it was pretty great.

It onto a tray and in oven at 450 F for 8-10 min.

White Bread w/ something extra


Bread recipe is a simple bread recipe. Start with
• 2 (8 g) packages of rapid rise yeast, sprinkled in
• ½ cup of war, water
Let sit for 5 min, till a creamy foam

Combine:
• 2 tb, olive oil
• 7 cups of flour
• 3/2 tsp salt
• ½ tsp of white sugar (maple syrup)

Add yeast mixture and than add 7/4 cups of water

Knead for 7-10 min, till it has formed together. Than let sit and put in bowl with some olive oil and a damp rag on top. Let it sit till it doubles, around an hour.

This is where I split the loaves up and added some spices, and flavors. The first loaf I mixed in
• Sliced olives
• Thyme leaves
• Sun dried tomatoes
• Olive oil


The second loaf I just mixed in:
• Maple syrup and I made a maple caramel sauce on top.




SO DELICIOUS

Time for Bread. Italian Style. Focaccia


Foccacia is so tasty. It is not a very simple task, but man this was so great.
Mix the following in bowl in this order
  • 2 tb of yeast
  • 3/4 cup of warm water
  • 1 tb of honey
  • 3/4 cup of flour
Place a damp cloth on dough and let it sit over night (or at least 2 hours)

  • 2 cup warm water
  • 3/4 cup of olive oil
  • 6 tb of honey
  • 3 1/2 cup of flour
  • 3 cup of whole wheat flour
Mix with the dough from night before and knead for 10 min

Cover again, and let rise for 30 min

Divide into 1/4s and put into on seperate baking sheets. spread out.

Sprinkle with
  • olive oil
  • coarse sea salt
  • pepper
  • garlic
or
  • Chocolate sauce for a more sweet taste. I did a lime, chili chocolate sauce in middle of my focaccia
