bacon sunchoke soup



I have been pretty bad at posting these past few days...and im sorry for that, but i have been busy. Im working on an art show at urban outfitters, writing an essay about the identity of nordic food, doing scientific experiments on cider that i (and friends) have brewed and finally my mum is town. Its been great, but busy. Last week the weather was cold so i made soup. this was it...seems out of place right now, but at the time it was not. at all so so delicous.

I started by
  • adding 5 slices of organic bacon to a soup pot
  • turning to med heat and letting bacon start to cook
  • cutting up an onion and adding to bacon once fat is starting to melt
  • cooking and stirring everyone once in while for 5 minutes
  • adding 3 large carrots (peeled and cut)
  • adding a large handful of sunchoke (peeled and cut up)
  • adding 2 cloves of garlic (smashed and diced)
  • adding 2 tsp of hot sauce
  • adding 3 tsp of curry powder
  • adding half a juice of lemon
  • stirring for a few more minutes
  • adding water and turning up heat
  • adding beef bouillon cube and put lid on top
  • once boiling, turn down temp to a simmer
  • let simmer for 30-40 minutes
  • use a blender to blend it
top it off with some sour cream, chives but i had some more bacon that was put in oven till crisp and chopped up... enjoy

cauliflower yellow bean dahlish things



I had some cauliflower the other day and decided to make this. I dunno, its kind of like dahl...but my version i guess. Hope you like..

I started by
  • slicing up a few pieces of fatty organic bacon
  • adding to a pot
  • turning to med-high heat
  • adding 1 onion (peeled and chopped up)
  • stirring for a few minutes
  • adding a clove of garlic (smashed and chopped)
  • adding 1 tbs curry powder, 1 tsp hot sauce and 1 tsp of maple syrup
  • stirring for another few minutes
  • adding 1 L water
  • turning to high
  • adding a beef bouillon cube
  • adding 2 large handfuls of yellow split peas
  • once boiling turning down
  • letting simmer for over an hour...till some water has evaporated
  • adding 2 tomatoes (diced up)
  • adding a large handful of cauliflower florets (smaller pieces pieces)
top with some red currants

root cakes



I made this the other day because i got a lot of vegetables from per. I had a bunch of root veggies and decided that i wanted to make a 'root cake' out of it.

I started by grating
  • 1 decently large beetroot (peeled)
  • 5 small potatoes (washed and scrubbed)
  • 2 sweet potatoes (peeled)
  • 1 parsnip (peeled)
and than a washed and finely sliced up a leek. Put it all in a bowl and it looked like this




now i added and mixed in
  • 2 eggs
  • 1 tsp of salt
  • 2 tsp lius syrup
  • 1 tsp of cayenne pepper
  • 2 tbs of grated mozzarella
  • 1 tbs of corn
  • 1/2 cup of flower
once all mixted, stuff the mixture into muffin cups, as seen below




Put in oven at 350 for 40ish minutes. They will brown on the top and solidify. and be soo soo tasty. I ate it with some black beans that i made a few days ago.

mergez sausage pita



I went today to the butcher and got some mergez sausage. I dont know how to spell it, but its a spicy african sausage.

I started by
  • frying up 2 sausages in a pan
  • adding a eggplant, sliced up
  • adding a red pepper, diced up
Let it all cook up for a few minutes. I added some maple syrup and a tsp of curry powder. I put the lid on and cooked it up for another 10 minutes...stirring occasionally. This is how it turned out.




I than added some of the mixture with a bit of
  • creme fraiche
  • mozzarrella cheese
and wrapped it up and put it on the fry pan to crisp it up a little.

stuffed onion



As i like to make one recipe based on the box of veggies i get, therefore i came up with this one. Its quite different and very tasty...and as per usual quite simple. I appologize before about all the sexual connotations, however as we all know, sex and food go well together...so maybe it makes sense

Get a medium sized onion, like size of your fist. (unless you have tiny or massive hands...than adjust accordinly). some delicious monastery styled sausages.
  • Peel
  • cut top and bottom off, so you can see the inner layers
  • cut out a hole in center (big enough to fit the sausage into)
  • stuff sausage into onion
  • put on a sheet of tinfoil (big enough to wrap around onion)
now for the other flavouring i added
  • a dash of hot sauce
  • a dash of maple syrup (or substitute)
  • a dash of vegetable oil
  • a tiny dash of sesame oil
  • some black sesame seeds
wrap it all up in the tinfoil and put in oven at 350 F for 45 min. Can unwrap at end so that it makes top golden brown.

As i said, its pretty simple...pretty hands on, but will definitely impress some people.

salami onion burrito



this burrito is really similar to the last one i had the other day...i'm doing a kind of double post because i have been eating these soft tortilla shells and well if you are by yourself than your gonna need another recipe so you don't get bored from the same old stuff...but the essentials are basically the same

i had the same ingredients as the last time, except the beans. so i had and layered in this order
  • soft tortilla shell
  • lettuce
  • corn
  • brown rice
  • salsa
  • buffalo mozzarella
  • salami/onion mixture
instead of the beans i used some salami and onion. I started by
  • dicing the salami and onion.
  • adding the salami to a pan at high temp
  • stirring for a couple minutes
  • adding the onion
  • stirring till its cooked (couple minutes)
and than created my burrito and put it on the pan so that it becomes a little crisp on the outside.

so create your own and enjoy it with some friends.

sauteed Jerusalem artichoke



Jerusalem artichoke can cause major problems in your gastric track, however if you can manage to make it through that...they are delicious. So make sure to get high quality ones. I had some organic ones in my box, and had no problem, but don't know why i didn't have any problems.

I tried another simple recipe.

Start up by washing and slicing up the the Jerusalem artichoke and some salami.

turn a large pan to med-high temp and add
  • salami
  • Jerusalem artichoke
  • tsp of olive oil
  • 2 bay leaves
  • 2 cloves of garlic (smashed/diced)
  • tsp of water
now keep cooking that with the lid on. Let it cook for 20ish minutes. Than take the lid off and cook it a little more so that it crisps on the bottom. Add a handful of walnuts if you want and Enjoy!

300th post...a simple tasty substance



I seriously just made this, and though it might not look delicious...it really was a late night snack that i needed to eat. I got the veggies from sam, through an organic farm outside of copenhagen. I didnt need to add much, and honestly im not even sure exactly what i ate, as im not sure if it is cabbage...it seemed too loose and leafy...but what ever a good cabbage would be good with it too....just not the super tightly knit one...i dont like that one much.

I started by slicing up some italian salami and threw it into a saucepan at a high temp.

Once it was hot and the fat was melting into oil, i added a big handful of sliced cabbage.

I then splashed a little bit of
  • lius sugar syrup (like maple syrup)
  • balsamic vinegar
  • chili oil
and than put a smaller lid on it so that it had more pressure. after a minute i used tongs to move it all around and flip leaves. Put lid back on, and than cooked it for a few minutes and continued to stir/flip it. Cook for a total of 8ish minutes and than eat it up.

baked BÖRSENFIEBER things...



On thursday i went to the BÖRSENFIEBER and i loved it. they are on the new cookbook and they were just so much fun to dance and listen to. Once i got home i was starving and decided to make something delicious. so this is what i made.

so i sliced the following into chunks
  • broccoli
  • Jerusalem artichoke
than finally i made a sauce out of
  • 1 tsp of sesame oil
  • 1 tbs of olive oil
  • 1 tsp of black sesame seeds
  • 2 tsp of soy sauce
  • 1 tsp hot sauce
  • 1 tsp of sugar
i mixed that all up and added it to a pan with the Jerusalem artichoke and broccoli.

finally i put it into the oven at 400 F for 30 minutes. I also added some water to another pan so that it would cook and steam at the same time.

Enjoy any time of the Day...but if you wanna really experience, than put on some BÖRSENFIEBER and bake these up.

i cant call it a caesar salad...



The sauce and the romaine are similar to caesar but i would not really think they are too similar. This might be a caesar on acid, or something that just gives it an amazing flavour and more substance than just some lettuce.

I started by putting some diced romaine into cold water to crisp it up, and then drained it and dried it with one of those things...you know what they are, they are for salad and they spin.

I had some cooked beets in the fridge so i diced those up.

Then i got a handful of shrimp.

i then layered everything. so it went salad, beets and shrimp.

The sauce (enough for 1 big salad) was made out of
  • 1 tbs grated parmesan cheese
  • 1/2 juice of lime
  • 2 tbs of olive oil
  • touch of hot sauce.
now add the sauce to the salad and enjoy!

Hot and Sweet Salmon



I was craving some fish the other day and Sam was lovely enough to go and by half a salmon, filleted but still having the skin on. I decided the only thing i could do with it was throw it into the oven with the skin side up so that it got nice and crispy.

I started by making a sauce/marinade consisting of relatively
  • 1/4 cup of sweet hot chili sauce
  • juice of 1/2 a lime
  • 1/2 tsp of sesame oil
  • 1 tbs of soy sauce
  • 1 tsp of hot sauce
mixing them all up i line a baking sheet with parchment paper. I put some sauce on the parchment paper than I placed the salmon skin up on the tray. Finally i put the rest of the sauce on top of the salmon and put oven to 400 F.

When the oven was hot i through the salmon into the oven and cooked it for 15-20 min, turning up temperature at the end so that the skin would definitely be crispy (But be careful, i almost started a fire.)

I ate the salmon up with my thunderheist potatoes...well with yams.

Tequila in the winter



i bought some tequila on the way back from Spain and now i have to drink it. Shots are nice but a good mixed drink is just happiness.

we made a jug of it. about a L worth drink, but it was not that strong.

I started by
  • layering a lot of ice at the bottom of the Jug.
  • add 1/2 cup of frozen red currants
  • pouring 6 shots of tequila
  • 1 tbs of lime-hydelberry syrup
  • 2 tsp of cranberry syrup
  • finally fill the rest of with sparkling water
God it was good. Enjoy

chicken feta stuffed squash



i decided to buy a squash the other day cause i wanted to cook it. I found a few recipes of how to cook it, but the basic one was, cut in half, gut out seeds, add sugar, butter and put in oven for 40ish min. I wanted to do it a bit different but i kept it pretty simple.

I started by
  • washing the outside so there was no dirt.
  • cutting in half. long ways.
  • scooping out the seeds and stringy parts.
  • putting in a baking dish. flesh side up.
  • adding a tbs of butter to each side.
  • sprinkling 2 tsp of sugar on top.
  • covering pan in tin foil
  • putting in oven at 375 F
  • waiting an hour.
  • taking out of oven.
  • scooping the insides of squash into a bowl. (making sure shell remains)
In bowl mixing up
  • cooked squash
  • 1/3 cup of diced up feta
  • 1 cup of chopped up cooked chicken (from other night)
  • 1 tsp of tobasco sauce
I then restuffed the squash with that mixture and put in oven for another 15 min.

It was delicious and cant wait to try again with some other things i can scrounge up.

balsamic dip



It seems like carrots are the only really crispy veggies right now at a decent price so ive been eating a LOT of them. They are fine by themselves but i have been playing around with some dips to make them extra scrumptious.

This dip can be made in any tiny container just
  • add 1/3 cup of creme fresh (sour cream can work too)
  • add 1.5 tsp of balsamic vinegar
  • add 1 tsp of sugar syrup
  • add dash of cayenne pepper or Tabasco sauce
mix it all up and dip your carrots into it. Enjoy!

asian styled pickled herring




I made pickled herring with curry the other day. Check it here. But now i have been playing with some other spices, so i decided to make the pickled herring with some Asian spices. My recent favourite is the chinese 5 spice.

Get some fillets of herring. Cut off the fin and slice into 2 inch strips.

In a pot mix
  • 3/4 cup of white wine vinegar
  • 3/4 cup of water
  • 2 kaffir lime leaves
  • 1.5 Tbs of 5 spice powder
  • 2 tbs of sugar...or a little more
turn to med-high to reach a boil. stir.

Let the mixture cool

Then begin to layer the fish. with
  • a tbs of ginger sliced finely.
  • a red onion sliced finely.
let it sit for a couple days and enjoy.

Orange Chocolate cookies



These cookies were made completely by scratch...with no recipe. suprinsingly they were delicious. I dont really know the amounts of things but in a couple days im going to try them again and actually write down the recipe. So...for now, just enjoy looking at them.

miracle fruit night



so after we had the lamb it was time for some miracle fruit.

now these, well are a little complicated to explain, but check out wiki.

in simple terms: they make sour fruit taste sweet

they are crazy, seriously mess with your head on your first time because well...just because you can start eating lemons, limes, oranges or any sour things, they just taste insanely sweet.

I am going to start posting things to try with it, so this time. well i would try
  • limes
  • lemons
  • grapefruits
  • unripe passion fruits
  • oranges (even a little too sweet)
oh and if your feeling very adventurous, try some balsamic vinegar with yoghurt.

stuffed chicken pitas

What do you do when all you have in your fridge is this? well i make something tasty and stuff it inside of some pitas. its really quick to make, and well as you can see is stuff you might have in your fridge, which you can always substitute for.




First steps first.
  • boil a few potatoes for mashing (should take a couple minutes)
  • remember to start from cold water
to make the chicken and the real tasty part of it
  • put tbs of olive oil in pan at med heat
  • throw in diced onions
  • cook till translucent (see-through)
  • add ground chicken and stir around
  • add tbs of Worcestershire sauce
  • tsp of hot sauce
  • add juice from a lime
  • a chopped up garlic
now stir it all around with a wooden spoon so it gets all cooked up. Can take 15 min, so that it all boils off.

Once cooked, put into a big bowl.
Then add potatoes to the saucepan and mash it up with some olive oil added.
Throw in some grated parm cheese into big bowl

mix it all up and then stuff inside of a sliced open pita.

Now put in toaster oven and Enjoy!

baked artichoke



so i made this twice, and well this one looks so much better and is something that actually can be made by a lot of people. There are two steps.

Preparation of the artichoke
  • pull apart center leaves of artichoke
  • cut the center so that you take the prickly center
  • use spoon to get all that out so you only have the center being empty
  • add a bit of lemon juice to make sure it doesn't change color
  • add artichoke to boiling water
  • let boil for 10 min so it gets kind of soft
  • take out
  • add cold water so it cools
  • cut the edges of artichoke
now for the stuffing i used
  • some garlic lemon chicken that i made the other day
  • some potatoes that were boiled then mashed up with the sauce from chicken
  • grated parm/mozzarella cheese
i stuffed the center with all that and then put in oven at 375ish for 20ish min. I also added a bit of balsamic vinegar on the edge of artichoke

now enjoy. Its enough to eat for two people

got some merguez sausage...



Wondering around the lovely neighborhood of norreboro sam and i strolled into two shops to get food for dinner. We were hoping to get some ribs, which i have been...and still am craving but unsuccesful walked into what must be a kosher butcher. Or at least one that sold no pork but only beef, lamb and some chicken. We bought some spicy mergez sausage... we also bought some pita cause well, who doesnt like pita.

To make this dish i had some really cheap wine and well in a sugar low decided the best way to cook it up was with with the wine, and put it all in the oven.

sam wanted mushrooms so what i chopped some up and added to the pan
  • chopped mushrooms
  • mergez sausage
  • touch of garlic
  • some cut up parsley
i put it into oven at 375ish??...pretty hot and let it all cook up. i let it kind of heat for a couple min before adding the wine. i added at least 2 cups of wine. and then let that all cook up.

After 15 min, i took it out, the sausages were cooked, wine was evaporated and well cut the sausages up

While in oven i cut up some pita into 1/12s. ie.
  1. cut into semi circles
  2. cut semi circles into 1/3s
  3. cut 1/3s in half
you should have 12 pieces per pita. paint some olive oil w/ garlic onto the pita chips and put into oven for 10ish min.

back in the main dish i poured the rest of the mixture into a saucepan that had been cooking for a couple min with
  • diced zucchini
  • olive oil
  • salt/pepper
i added the stuff from the pan, ie mushrooms, diced sausage, and cooked that up at med-high heat.

i added a touch of fresh parsley for some color and we ate it all up. extremely content.
