Lemon/garlic chicken

so this was a really tasty dish that i remember from home. Its lemon chicken with some homemade lemon mayonaise. I had it with some rice, which i think wasnt the best, but the whole meal together was so great it didnt really matter.

The chicken was pretty simple, i made of a sauce of
  • olive oil
  • 2 cloves of garlic
  • 1 lemon, zested, juiced, than sliced up
  • rosemary
  • sugar syrup
that all was mixed up together and than the chicken was added to a saucepan with the sauce drizzled on top. the whole lemons fry up and change their taste, so make sure to have them in there. Put lid on so juices stay inside. and cook for 20ish min, or longer. it should not get dry, esp if you use drumsticks.

The rice, well any way you make rice would probably be better than mine, but remember its usually 2-1 cups of water to rice.

Finally the lemon mayonaise. Now well this is kind of special but it is NOT hard to make at all. and well i still have some in a squeeze bottle in the fridge. So what did i do with it?

i blended together
  • 2 egg yolks
  • some lemon zest
  • juice from a lemon
once that was all blended
  • i added olive oil till it thickened up. should be around a cup
you can use canola oil, or add some mustard which could add some good flavour as well.

Enjoy!
