Ive made this now three times.
The first time.
the second time

And well i basically did yet another adaptation of the second one.

I cut a little fat off the top, and made a honey-mustard dressing. while it was cooking i kept adding some more honey-mustard dressing which was made of simply
  • honey
  • mustard
all the rest was the same, with cooking on roasting rack for half hour at high, 400 F, than turning down to 300 and roasting for another hour. than taking off roasting rack and adding
  • potatoes
  • onion
  • garlic


to tray and cooking those all up together. i did turn up the heat near the end, just so i could get some crispy bits on the potatoes, but i took the roast and put in a lower rack so it didnt dry up too much. You can also cover in foil to keep juices in.
