Nectarine Cinnamon Sour Cream Cake



So i made this the other day because i thought i was buying yogurt and well i ended up with sour cream. I think i need a better bundt cake pan, so that the center is more cooked, however it still was super tasty. The recipe originally had apples on top, but i chose nectarines because i had a couple spare ones around.

The cake was made by creaming
  • 125 g of butter
  • 2/3 cup of superfine sugar
  • 2 tsp of cinnamon
i creamed that together so it was kind of fluffy, sugary and buttery.

I than added
  • 2 eggs
  • 2/3 cup of sour cream folded in
sift
  • 3/2 cup of flour and mix it all up
Now put this into a spring form cake pan, or well a bundt cake pan.

I than placed a complete level of sliced nectarines.

For topping i mixed together some butter, sugar and cinnamon. The recipe called for ground almonds but i didnt have any. This was one area that i thought could have been improved upon, but thats because i like tasty toppings.

I baked in oven at 350 for around an hour or till top was nicely brown, make sure to do the stick test...where you stick a stick/knife in and if it comes out clean, well your golden. The only problem occurs with where you stick the knife. If cook too long, outsides are gonna be very dry.
