curry savory muffins


i made these muffins the other day. I based the recipe after a simple muffin recipe

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • 1 egg, lightly beaten
  • 1 cup milk
and changed it around because, well i didnt have much milk and i had lots of curry soup sauce from the other day. I must have added more than a cup of it, and also subsituted the butter with olive oil.

I than fried up some ground chicken with
  • diced garlic
  • diced onion
  • diced chili pepper
  • olive oil
  • thyme
i also added some corn and diced up green peppers to the mix

I than put them in muffin cones and bake them at around 350 F.

They were delicious and most likely going to be hard to replicate. but ill try to get some measurements the next time i make them.
