Super similar to the last time i did pig belly. so i would use the other recipe as reference.

One of the difference was i cut off some of that skin/fat from the top.
The picture above was taken prior to putting the celery, potatoes and onions into oven for the second cooking.
It came out this time looking like this.
I had it with some corn and zucchini as i always do them.
