Pig belly...


okay though it sounds gross this is honestly one of the tastiest cuts of meat i have eaten. Imagine ribs without the bone and more fat. haha. well kind of. but i have seen a ton of it in the supermarkets and found a recipe to cook it up. I changed it a bit but the basics are the same. I need to try it again with some new alterations but this is what i did.

Oven at 420 F
  • sliced to the amount i wanted
  • scored the top
  • added salt to top (fatty part) making sure it got into cracks from score
  • added salt/pepper to bottom
Put on a roast rack and put in oven for 30 min.

after 30 min, turn down to 350 F cook for another hour. I also added some honey and mustard to the top to give a little more flavour.
  • Now, mine got a little crisp cause well i left mine in for longer at higher temp. but i think less time is better to get more juices to flow.

Okay so now that you have it cooked for an hour and half, cut up some
  • celery
  • garlic
  • onion
  • potato
  • salt/pepper
  • touch of thyme
take roast and roast rack off, and put all the above in with the fat that has dripped off and coat all the veggies with it. Put roast in the middle, and if top is already really crunchy than put tin foil on top so that it wont burn.

Cook it all for another 30-40 min. I changed pan and took roast off and cooked potatoes for longer to get a little more crisp. but be wary of them burning. Also might need to change pans because of too much oil.

Now this should be ready for enjoyment. Add some parsley to give a little green, but seriously it is so good.
