soup for the sick


Im not exactly sure why, but sadly ive been feeling a little bit under the weather. And yes, i do know that my jewish heritage says i should make the famous matza ball soup. But for one reason or another, i am against them. Its not a comfort food for me, unlike a nice chicken soup that is either spicy, or has corn and chicken in it. As long as its not plain, i like to slurp it up.

so on this day
  • i came home
  • put on a big pot on the stove
  • started to cook
i started with
  • a few shallots chopped up
  • some olive oil
in pot at med heat. once softer fill pot with water

to this i added
  • a few carrots, chopped up coarsely. look at picture for reference
  • 1 chicken boullion
  • sliced green onion
  • cajun powder
  • salt/pepper
  • cayenne pepper
let it boil for 30ish min.

in another pan, just before eating i fried up
  • a can of corn
  • cajun spice
  • cayenne powder
i mixed those together and made myself a danish croustini.

it was nice, tasty and exactly what i needed.
