Ribs...the lazy lazy way.



now seriously these ribs were the easiest thing to do...BUT its not my suggestion to do them very much. They are delicious, so beware.

  • turn the oven to 260 f
  • paint ribs with a mixture of bbq sauce and hot sauce
  • wrap in tinfoil leaving top open
  • pour beer into packet and close up
  • put onto baking tray ( it might leak a bit)
  • put into oven and let bake for 2.5 hours
  • take them out and have them with salad/bok choy or something tasty and green

lamb chops



I'm not sure who knows it, but with two parents from Australia i sometimes just crave good lamb chops. I like to marinade them with my favorite spices for lamb.

The classic flavours for lamb are
  • olive oil
  • rosemary
  • maple syrup
  • garlic
  • touch of mustard
  • salt/pepper
Let it marinade in a plastic bag over night.

Now to cook the steak i would not suggest the way i did it. But get a griddle or something that can get nice and hot.

Once the pan/griddle is hot,
  • throw it in
  • let it sear for a 4 minutes
  • flip it and let sear for another 4 minutes
  • flip it once more and cook for another
It should be a little rare inside, but it should be fine. Serve it with fennel salad and also some beets.

tomato chicken w. green beans



i made this chicken the other day with a side of green beans. It was super simple, juicy and just plain tasty. TO make the green beans check out this.

turn the oven up to 375 C.

to start up making the chicken
  • slice an onion
  • add to pan with some olive oil
  • add a clove of garlic (chopped/smashed)
  • turn to med-high heat
  • add 1 tbs of tandoori powder
  • add 1 tsp sugar
  • finally add the chicken breast to the pan
cook that up for 5-6 minutes in pan and than add to a container that you can put into the oven. Then add a can of tomatoes and cover with some tin foil.

Now let it cook for 30-40 minutes. serve up with green beans and maybe some sweet potato latkas if your interested.

tandoori ribs



Now ribs are so amazing. They are delicious, not super healthy but just delicious.

I started be rubbing ribs with a rub made of
  • 2 tsp of tandoori spice
  • 2 tbs brown sugar
  • 1 tsp of cayenne powder
Wrap them in tinfoil, put in fridge for a few hours.

In another bowl i mixed up a sauce made from
  • 2 cloves of garlic
  • 1 cup of red wine
  • a touch of worcheshire sauce
Than i filled the tinfoil pockets with the sauce and put in oven at 250 F. For 2.5 hours.

Once it is all cooked. Drain the sauce into a saucepan. Turn the heat up, so it boils off the water.

Then cut the ribs up. and coat them with the sauce that is left.

Now enjoy with a beer!

5 spice lamb ribs



These ribs were made almost exactly like the other ones but with a couple difference. Use the other recipe for reference.

the sauce was made from
  • 1 tb of asian 5 spice powder
  • 1 tsp of sesame oil
  • 2 cloves of garlic chopped finely
  • 2 tsp of fresh grated ginger
  • some hot sauce
  • touch of red wine (to give some more liquid)
I let them sit in plastic bag like other recipe over night. I also cooked them the same way, though when i drained the fat i put it into saucepan and
  • put 1 large tb of fat/sauce in saucepan at med heat
  • boil down a little (couple min)
  • constantly stir
  • add 1/2 zucchini diced up
  • mix around in sauce and cook for 15 min
Now you should have the ribs and zucchini, which i had with some leftover rice from the other night.

lamb ribs



I have decided that going to the butcher is well a good thing. We know who is cutting the meat, we can see the dead animals and well brings us back into contact with the food we are eating. The only problem in denmark, is well they dont speak english so its mostly a lot of pointing and hoping they understand.

the other day i got some lamb ribs which are not the ribs attached to the lamb chop, or the crown lamb But these were really tasty.

They were pretty fatty so i thought that letting them sit in a marinade would do them good, then cooking em in the oven for an hour or 2.

I made the marinade super simple with
  • touch of olive oil
  • touch of lius syrup
  • a spring of fresh rosemary
  • 2 cloves of garlic
  • a pinch of salt
  • a pinch of pepper
  • and a good squeeze of hot sauce
I put the ribs and the marinade/sauce in a plastic bag and let it sit over night.

To cook i used an oven roasting pan putting the ribs on it, adding 1/2 cup of red wine and covering it with tinfoil so that kind had some pressure build up. at 350 F

I checked them after 30 min, flipped them over, covered again and let sit for 30 min while it worked the other side.

After that 30 min i took off the tinfoil and drained a little of the fat that had collected. I then cooked the rest of the ribs for another 30 min at 400 F.

Finally put on wire rack to drain fat and ate them up.

Sam's Birthday Dinner




For Sam's birthday i wanted to make something delicious, and she wanted something roasted. So we decided that making roasted pork belly was the best option. It was really nicely done and we ate it with roasted potatoes, carrots, celery, beets and some goats cheese stuffed mushroom caps.

the pork was done the way i usually do it. with a dressing of
  • mustard
  • honey
  • chili sauce for spice
i also cut off the top layer of skin so it wasnt soo tough and more fat could melt off.

i roasted the veggies (carrots, celery) with the pork and added the fat of pork to potatoes but cooked in another sheet at the top of oven so it would be hotter.



the mushrooms were really simple too. I just took the stems out, and where the little bowl in the cap i just added a little bit of goats cheese. I put those in the oven for 15 min while everything was cooking.

the beets were done by putting beets in oven at 375 wrapped in tin foil for 40 min to an hour. i just put them in oven with meat.

Once you have the cooked beets mix
  • some grated orange rind
  • the juice of an orange
  • touch of vinegar
  • a little bit of olive oil
  • salt/pepper
  • cayenne powder
Than slice beets and drizzle sauce over all of this.

roasted lamb


While most days ive been working with pork, i decided to do something different today. I started off with a hunk of lamb i bought at a kosher butcher, or one that didnt sell pork. I put it into a plastic bag with some
  • olive oil
  • crushed/chopped up garlic
  • rosemary
  • thyme
i let it sit for a couple hours and than took it out and put it to roast in oven at 375 F.

Roasted for a couple hours, and while doing this i made some baked fries which are basically like my thunderheist potatoes except they are longer and look like fries. Oh and no cheese. Like below.



i also wrapped an onion in foil, olive oil and put into oven with potatoes.

The final bit was the zucchini, which i cooked for 20 min in the roasting pan, with the roasting tray on top, so it didnt get squashed. I didn't add any new flavours, just the juice of the lamb.

the lamb will vary in times, so check it out with your butcher. Mine was nice and juicy inside still so i think i could have cooked it a little longer.

ribs might be my fav thing


so i decided it had been a week or so and i hadnt made ribs. So i used the same recipe as the ribs and beets. and cooked them up

this time the BBQ sauce was made of
  • tb of ketchup
  • tsp of mustard
  • tb of worstershire sauce
  • 2 cloves of garlic
  • a small finely chopped onion
  • touch of olive oil
  • added some parsley for good measure

Pigs in a blanket. More like tastyness wrapped in goodness.


Proper pigs in a blanket. Now we all know about the puff pastry surrounding a small hot dog as a tastry treat, but as i had left over dough I decided to play with the recipe and indulge myself.

I than cooked a tasty sausage on the BBQ. Giving it a crispy outside, and cooked inside.
Once taken off the BBQ, I put the sausage in some rolled out dough. I proceeded to roll it all up with
  • some mustard
  • BBQ sauce.
I put this all into oven at 350 for 10ish min. or til brown on outside

I had with a side salad of greens.

Fried Up steak


So we had eaten an amazing dinner the night before and had some left over steak which was cold and kind of bland.
SO i put it into a saucepan with
  • a touch of soy sauce
  • a cayenne pepper
  • garlic
  • maple syrup
And fried it up till it was all coated and slightly glazed. Than we all chowed down.

Chocolate Chicken: try 3


I know it does not looks totally amazingly appetizing, but I tried Chocolate Chicken for the third time. and it tasted Great simple ingredients:
• Garlic
• Olive oil
• Cajun spice
• Dark Chocolate (cut up)
Put all in tin foil, put in oven at 350 for 20 minutes.

Maple Chorizo Sausage



Chorizo sausage with maple and apple. but i forgot the apple.

• Chorizo sausage sliced up in fry pan add
o Maple extract
o Balsamic vinegar
o Touch of brown sugar
o Salt/pepper

Chocolate Chicken


I tried it again. Chocolate chicken try 2
• Dark Chocolate
• Garlic
• Lemon rind
• Lemon juice
• Pepper/salt
• Cayenne pepper
• Touch of olive oil
• Touch of cocoa powder and sugar
Wrapped in tinfoil
• Oven at 400 for 20. Than BBQ.

CHicken: ginger/garlic soy??


This chicken pretty simple, but it was BBQd.
• Ginger
• Garlic
• Soy sauce
• Cayenne powder
• Sesame seeds

So simple, gonna be tasty.

Fried Chicken. Part 2



So I made a mistake with the chicken. I guess the insides were not fully defrosted so once i ate all the delicious skin
  • i ripped the rest off the bone
  • covered with some bread crumbs
  • put back into oil for frying
I than put that with my bread i had made before and made a fried chicken sandwich. Tasted great, though not as great as the skin was, and sort of sad that it did not work out at first, but that is cooking.

Birthday Rack of Lamb


One of my favorite flavors, Cumin and lamb came to my mind, starting at a Szechwan restaurant in Vancouver. I found this rack of lamb for super cheap at the ‘metro’ at 2 am in the morning and put it into freezer till my birthday. With housemates who dislike the smell of lamb it was hard to see if they were any good, BUT I do think the recipe creates tasty lamb.

Rub Recipe:
• Cumin
• Lime Juice
• Lime zest
• Cayenne powder
• Salt/pepper
• Olive oil
• Garlic

This was all mixed together, than caked onto the lamb, than put into the oven to cook, 400F for 30ish min? This was also great with lamb chops, or roasted lamb. It does give a strong smell but man was it tasty.

The other thing I did was by a lamb roast at beginning of year, and sliced it up so I would have lamb steaks. These steaks were cooked, than sautéed with the rub recipe.

Soy Steak w/ veggies

but i also decided to add some veggies, So i cut up some broccoli and put in the steak marinade and then through those on the BBQ with the steak. This was so much tastier than the other day. I guess patience is a virtue, or buy two steaks and save one for the next day.

Soy ginger steak


After extending my bike ride to find some good steak I decided to marinate it with the following.
  • 1 big clove of Garlic
  • pretty decent amount of Ginger
  • 1/2 cup Soy Sauce
  • 1 onion
  • Some chili powder
  • sesame oil
I cooked mine on the BBQ, and man was it satisfying.

A simple marinade than thrown on the BBQ Marinade consisted of:

• Lemon juice
• Lemon grass (why the hell not)
