simple organic Sausage and cabbage...



Now usually i would not just make some sausage and cabbage together, but this week is different. I just got my first food box of organic vegetables and they gave me a really nice organic cabbage. I then bought some sausages at the same places, some gorgeous organic ones. I knew i didn't really need a lot of other flavors or sauces so i made them pretty simple.

Start off by
  • frying a sausage a med-high temp.
  • adding some water so that it cooks all the way through.
  • once all cooked, 5-10 minutes, take off the sausages.
  • while sausages set, add some sliced up cabbage to pan.
  • add a tsp of balsamic vinegar, olive oil and touch of hot sauce
  • slice up the sausages and add them to the pan.
  • now stir every minute or so and cook for 5-7 minutes.
Now enjoy with some fresh beer!

lemon squares



Since i was young, i have always loved the taste of lemon. Ive been craving some new sweets so i decided that this was the easiest thing to make. Its not exactly healthy, but it tastes good and in moderation its not too bad for ya.

start by making a crust by mixing
  • 1/2 cup of softened butter
  • 1/4 cup of sugar
  • 1 cup of flour
in a bowl. Then press mixture into a pan and put in oven at 350 F for 15-20 min. (till golden colored)

the filling...or other mixture is made by mixing
  • 2 eggs
  • 3/4 cup of sugar
  • 2 tbs of flour
  • 1 lemon, juiced
Now pour this mixture over the baked crust. Bake for another 20 minutes.

Let them cool for a few minutes so they firm up. Cut them up. And then sprinkle powdered sugar on top of squares.

tomato bacon pasta



On these lazy sundays i find myself craving a lot of vegetables. Usually having some greens gets me feeling perfect, but i have been starting to love plain tomato sauces these days. Well...as plain as a tomato sauce i can.

I started off by
  • cutting some bacon, and putting it into a saucepan
  • letting all the fat ooze off
  • dicing and adding an onion to saucepan
  • smashing two cloves of garlic and adding those in
  • letting it cook up for a couple minutes
  • adding a handful of chopped carrots
  • adding a can of chopped tomatoes
  • for some spice adding spices of 1/2 tsp of hot sauce
now continue to stir it and let it all boil down. season with
  • salt
  • pepper
  • sugar
Enjoy with some spaghetti!

sesame bok choi w, bacon...



In copenhagen it is really hard to find good asian ingredients. But once you find the good thai supermarkets, there is nothing easier. Kind of out of the way, in the middle of the meat packing district there is a great little market that sells some great fresh veggies and all the asian treats one could want. I decided to get some bok choi (i think thats the right name) and some hot sauce.

I started by
  • frying up some bacon, (at med-high heat) so that i could use the fat to cook up the bok choi.
  • adding a tsp of hot sauce to the frying bacon
  • stirring that around. flipping bacon.
  • taking out the bacon and draining the fat from it.
  • adding the bok choi and stir it all around.
  • adding a touch (very small amount) of sesame oil. and soy sauce.
  • continuing to stir.
  • adding some white sesame seeds
serving all together this delicious treat is a feast of flavours and is kind of healthy...but not THAT healthy.

salami onion arugula pasta



I was starving the other day and i decided the easiest thing i could do was make up some pasta. I didnt have tomatoes to make a basic marinara sauce, so i decided to try something a little different.

I started by making a big bowl of spaghetti. Add a little bit of pesto and olive oil to it so that it had a little bit more taste. and then made a sauce out of the stuff i had.

I began the sauce making by
  • dicing up an onion
  • dicing up a decent chunk of salami
  • throwing them both into a small saucepan
  • cooking for a couple minutes at med-high heat.
  • adding enough pasta for yourself.
  • adding a handful of argula and stir it all up together.
I then added a touch of parm cheese and enjoyed everything for a great lunch.

honey soy garlic wings



the last time i made wings, i just loved them so much that i needed to try another alteration. So I decided to make a honey soy garlic type of wing.

I started about the same as last time, setting aside about 20 wings. enough for me and a couple other people. Then making sure to cut them into two pieces, one with last two segments and one for the first segment. This way the wings arent TOO big.

To make them taste good i started by adding
  • 3/4 cup of flour
  • 1/2 tsp of cayenne pepper
  • 1/2 tsp of salt
to a resealable plastic bag. Sealed it and shook it up.

Then i added the wing. and shook it all up some the wings got completely covered with the flour mixture.

once all coated i put it in the fridge for an hour. and layered a baking sheet with parchment paper (so does not stick).

After the hour turned oven to 400 F.

Before putting them into the oven i whisked together
  • 1/4 cup of vegetable oil
  • 1/4 cup of hot sauce
  • 2 tsp of honey
  • 2 cloves garlic (smashed/diced)
  • 2 tbs of soy sauce
And dipped the wings in this mixture before placing them on the baking sheet. Pouring the rest of the mixture ontop of the wings. I then put into oven for 45 min, turning over at around 25 min to make sure they cooked on both sides.

Hot and Sweet Salmon



I was craving some fish the other day and Sam was lovely enough to go and by half a salmon, filleted but still having the skin on. I decided the only thing i could do with it was throw it into the oven with the skin side up so that it got nice and crispy.

I started by making a sauce/marinade consisting of relatively
  • 1/4 cup of sweet hot chili sauce
  • juice of 1/2 a lime
  • 1/2 tsp of sesame oil
  • 1 tbs of soy sauce
  • 1 tsp of hot sauce
mixing them all up i line a baking sheet with parchment paper. I put some sauce on the parchment paper than I placed the salmon skin up on the tray. Finally i put the rest of the sauce on top of the salmon and put oven to 400 F.

When the oven was hot i through the salmon into the oven and cooked it for 15-20 min, turning up temperature at the end so that the skin would definitely be crispy (But be careful, i almost started a fire.)

I ate the salmon up with my thunderheist potatoes...well with yams.

bacon avocado sandwiches



My new avocado craze has really taken a hold of me. So yesterday i decided to make myself a really simple sandwich.

Start by putting some bacon in the oven at 350 F on a pan covered in tinfoil or parchment paper. Cook it for 10-15 min, flipping so that it gets crispy on both sides.

Now while this is in the oven start
  • slicing and mashing the insides of an avocado in a small bowl
  • adding the juice of half a lime
Now throw a piece or two of bread into the toaster to get toasted, then start to create your sandwich with bacon topping the avocado mixture.

Ohh and for the sake of my dad and other jews or non pork eaters, you can use pastrami or another cure meat.

fried pasta!!!



Fried pasta is by no means a healthy food. However, it is DELICIOUS.

Start off with some extra pasta from the night before. Let it site in the fridge over night so the tastes infuse into all the noodles and such.

The next morning get a pan and add a bit of olive oil. Turn to med-high temp so that the oil gets nice and hot and ready to fry.

Now add the pasta and fry it up nicely and sprinkle a little parmesan cheese on top.

Let it fry up for 5 minutes, so that there are some nice crispy noodles at the end.

Now enjoy with some wine.

mint ginger cod



I have been checking out this flavour website which has been very nice and helpful for finding out some new cool flavours. I had some butter in the fridge and some mint so i decided to make some cod with mint ginger and butter.

I started by
  • melting 1 Tbs of butter
  • mixing in 1 tbs of chopped mint
  • adding 1 tsp of ground ginger
  • 1/2 tsp of salt
i then dipped the pieces of cod in the sauce and let it sit for a couple minutes.

I put a stickfree saucepan at med-high heat. And put oven to 400 F.

I then put the cod onto the saucepan for 30 seconds a side and the placed the cod on a pan coated with parchment paper.

Put the fish into the oven for 10 minutes and enjoy with some rice.

Sesame Hummus



Hummus is one of the easiest dips to make. I usually make sure i have a can of chick peas on my top shelf at all times. This time i decided to add a little sesame flavour to the hummus to give it something a little different.

Start by
  • draining a half the juice out of a can of chickpeas. (keep half so that it is viscous enough)
  • adding chickpeas and the juice to a container suitable for a blender
then add
  • 2 tbs of lemon juice
  • 2 tbs of olive oil
  • 1 tsp of sesame oil (very strong stuff so watch out)
  • 2 cloves of garlic
  • 1/2 tsp of salt
  • 1/2 tsp of black pepper
Now blend that all together til its a nice consistency. If its too thick, add a little bit of olive oil or lemon juice...but make sure to adjust it to your taste.

Now once you have it tasting almost how you want it, put it in a bowl to serve.

To give a nice look sprinkle on some
  • black sesame seeds
  • paprika
  • cayenne pepper (spicy)
Now enjoy with some pita and friends.

they were completely deilicous, so i tried them with some other sauces...but that is for another day.
