fried rice in denmark




Now fried rice might be one of my favourite asian dishes. Or actually, one of my favourite dishes period. Its good with almost all flavours that one wants to put in it. Personally i love with some meat or shrimp and some egg, with veggies.

I started out with a decent amount of brown rice from last nights dinner. I also had precooked shrimp, an egg whisked with some garlic, and some sliced carrots.

I started by adding a tiny bit of oil to a pan, heating it up and scrambling an egg in it. Once the egg is scrambled i set it to the side.

Now i made a dressing of
  • oil
  • garlic
  • ginger
  • sweet and spicy thai sauce
  • sesame oil (just a drop or two)
  • soy sauce
Finally i added the carrots to the saucepan and then added half the sauce to them so it would all cook up together. Letting it cook for a couple min i then added the rice, shrimp and egg. Frying that all up ( adding a little oil so it fries up nicely). Make sure to continue to move the rice around so it doesnt burn or stick to the bottom, but the longer you let it set the crispier it will get.

Now enjoy this delightful dish whenever you please.

smorrebrod with leverpostej and pickled beets




Ive been having this for a couple days in the morning. Creating a smorrebrod from toast, liverpost (chopped liver), pickled beets and a little bit of horse radish.

I made my own pickled beets with a very simple pickling recipe that is usually used for pickling cucumbers.

I started by baking beets in oven at 400 F for an hour.

Mix...in a small pot
  • 1/3 cup of apple cider vinegar
  • 1/2 tsp of salt
  • 2 tbs of sugar
  • 1/2 tsp of pepper
  • 1/3 cup of water
  • 1 tsp of dried dill
stir at med-high heat till its all super saturated. Let cool.

Slice beets up, put into jar for pickling and pour the mixture over beets.

Now let it sit for a day or two and enjoy.

supreme pizza

I started by making a batch of pizza dough.

paint the baking pan with a bit of oil. sprinkle a little bit of corn meal. this preps the pan so the pizza does not stick.

i rolled the dough out thin and coated it with
  • some tomato paste
  • a dash of tobasco sauce
  • sliced mushrooms
  • diced green peppers
  • diced salami
  • a lot of mozzarella cheese
  • a little bit of feta cheese
Put it into an oven at 350 F for 15-20 min and Enjoy with some beer.

supreme omlette



This omlette has everything that a supreme pizza has, except the pizza dough and tomato sauce have been substituted with eggs.

Its a really easy prep by beating 4 eggs in a small bowl with a smashed/diced clove of garlic.

start by dicing into small pieces a
  • handful of salami
  • handful of green pepper
  • handful of mushrooms
Now start by adding the salami to a saucepan. turn to med-high heat so the fat drips as it heats up. Once there a bit of fat in the bottom add the green pepper and mushrooms. stir that all up and let it cook for a couple min. Finally add the egg mixture and sprinkle a handful of mozzarella cheese on top. Keep it cooking for a couple min so the egg sets. Flip half of omlete over so that it is cooked on both sides. Flip one more time so it cooks all the way through.

Enjoy with some toast.

Tequila in the winter



i bought some tequila on the way back from Spain and now i have to drink it. Shots are nice but a good mixed drink is just happiness.

we made a jug of it. about a L worth drink, but it was not that strong.

I started by
  • layering a lot of ice at the bottom of the Jug.
  • add 1/2 cup of frozen red currants
  • pouring 6 shots of tequila
  • 1 tbs of lime-hydelberry syrup
  • 2 tsp of cranberry syrup
  • finally fill the rest of with sparkling water
God it was good. Enjoy

tandoori ribs



Now ribs are so amazing. They are delicious, not super healthy but just delicious.

I started be rubbing ribs with a rub made of
  • 2 tsp of tandoori spice
  • 2 tbs brown sugar
  • 1 tsp of cayenne powder
Wrap them in tinfoil, put in fridge for a few hours.

In another bowl i mixed up a sauce made from
  • 2 cloves of garlic
  • 1 cup of red wine
  • a touch of worcheshire sauce
Than i filled the tinfoil pockets with the sauce and put in oven at 250 F. For 2.5 hours.

Once it is all cooked. Drain the sauce into a saucepan. Turn the heat up, so it boils off the water.

Then cut the ribs up. and coat them with the sauce that is left.

Now enjoy with a beer!

polenta with tomato pea stuff



Ive had this polenta mix for quite some time. And decided it was time to use it with something else.

I followed the directions of the polenta mix. which was adding 1/4 packet of polenta with 2 cups of warm water. whisking till all mixed up. putting heat up to high and stirring with a wooden stick constantly for 35 min. After 35 min i filled re-usable muffin molds with the polenta mixture. let them stand for an hour. Then you can slice them up and fry them slightly, before having with some tomato pea stuff from the other night.

Enjoy on a cold winter night.

pea tomato tastyness



I got a big bag of yellow/orange peas. I decided i need to start to cook them up soon.

Start off by rinsing out a cup of peas. in some cold water. Then drain.

In a pot
  • add the rinsed cup of peas
  • 4 cups of water
  • 1 vegetable boullion.
  • stir.
  • turn to high heat. till starts to boil.
  • put lid on. turn to low.
  • stir. take off foam. if it forms.
  • let cook for 35 min.
After the peas have cooked, in another pan
  • add tbs of olive oil
  • turn to med-high heat
  • add 1/2 diced onion
  • 2 cloves of garlic. smashed. diced.
  • 2 tsp masala curry powder
  • 1/2 can of corn.
  • 3 carrots. grated. chopped up.
stir all around so it kind of sears it. Then add a can of tomatoes.

Add all this to the pot of peas and cook it all together. Stir. Let cook for another 20 ish min.

Now enjoy with some bread.

Mum's Musli



Now everyone in Denmark seems to eat Musli in the morning. If you go out for brunch, there is musli with yoghurt and berries. And why not? its delicious and from what i can tell, pretty healthy. The recipe i got from my mum actually

  • get a mixture of grains that look like rolled oats.
  • mix them together with slivers of nuts (almonds are probably best).
Make a dressing ( emulsion) with equal quantities of
  • either honey or maple syrup.
  • oil- generally safflower oil.
add a touch of cinnamon or vanilla if you want a more specific flavor. to either the dry mixture or the dressing
  • mix all the dry ingredients with the dressing so its all lightly coated.
  • spread out on baking tray about 1 inch thick. like cookies.
  • Bake at low heat. 280 F for about an hour or until golden brown.
stir/toss once so flavour/moisture is evenly distributed.

after all is baked add in
  • toasted pumpkin seeds. sunflower seeds.
  • dried fruit of your choice. raisins.
Now enjoy with some fresh berries and yoghurt. or if its winter, just some yoghurt, but enjoy!

American Breakfast...just a little different



Every once in a while i love a big american breakfast. I had bacon, eggs, and some mashed potatoes from the other day. I decided i wanted to be nice and full for the long morning of classes so i decided to cook it all up again.

I started by frying up bacon. Putting in pan at med heat, starting when pan is cold.

Once the bacon is cooked, take it out of the pan and take off the heat so fat does not burn.

in a small bowl stir up
  • 2 eggs
  • 2 tsp of tandoori spice
  • 1 tsp of lius syrup
  • 1 tsp of tobasco sauce
Put the pan back onto the heater, and once it is hot add the eggs mixture. Now cook the up like you would cook scrambled eggs, moving around constantly.

Add the mashed potatoes to the other side of the saucepan to heat those up.

Now cook it all up for a couple min and Enjoy with a cup of OJ! or some coffee.

chicken feta stuffed squash



i decided to buy a squash the other day cause i wanted to cook it. I found a few recipes of how to cook it, but the basic one was, cut in half, gut out seeds, add sugar, butter and put in oven for 40ish min. I wanted to do it a bit different but i kept it pretty simple.

I started by
  • washing the outside so there was no dirt.
  • cutting in half. long ways.
  • scooping out the seeds and stringy parts.
  • putting in a baking dish. flesh side up.
  • adding a tbs of butter to each side.
  • sprinkling 2 tsp of sugar on top.
  • covering pan in tin foil
  • putting in oven at 375 F
  • waiting an hour.
  • taking out of oven.
  • scooping the insides of squash into a bowl. (making sure shell remains)
In bowl mixing up
  • cooked squash
  • 1/3 cup of diced up feta
  • 1 cup of chopped up cooked chicken (from other night)
  • 1 tsp of tobasco sauce
I then restuffed the squash with that mixture and put in oven for another 15 min.

It was delicious and cant wait to try again with some other things i can scrounge up.

Avocado and shrimp salad...x2



ive been really happy eating avocadoes lately, even though its not the right time of year but it is just way too damn tasty. This salad was eaten on some bread.

It was made with a mixture of
  • an avocado
  • half the juice of a lime
  • 1/2 tsp of tobasco sauce
  • 2 tsp of creme fresh
  • 1 tsp of salt
then mix in
  • 1 small tomatoe (diced up)
  • 150 g of pre cooked shrimp
And slop it onto a piece of toast and Enjoy!

balsamic dip



It seems like carrots are the only really crispy veggies right now at a decent price so ive been eating a LOT of them. They are fine by themselves but i have been playing around with some dips to make them extra scrumptious.

This dip can be made in any tiny container just
  • add 1/3 cup of creme fresh (sour cream can work too)
  • add 1.5 tsp of balsamic vinegar
  • add 1 tsp of sugar syrup
  • add dash of cayenne pepper or Tabasco sauce
mix it all up and dip your carrots into it. Enjoy!

tuna tomato pasta



I needed to clear out some things from my pantry and pasta is always so delicious so that is what i made. I started by making a simple tomato sauce in the usual fashion.

  • put a pot with a touch of olive oil on the stove at med temp
  • dice up a small onion and add to pot. stir.
  • add a clove of garlic, smashed and diced
  • give a couple min to get the flavours out
  • add 2 carrots diced up into small pieces. stir.
  • give another couple min to cook the carrots slightly
  • add a can of crushed tomatoes. stir.
  • add a tbs of tomato paste. stir.
  • add a tsp of sugar. stir.
  • add a dash of salt/pepper
  • add a dash of cayenne powder (for some spice)
now let the water cook off for a bit at med temp stirring ocasionaly. should take at least 15 min.

once you are ready with pasta grab a can of tuna. Flake up the tuna so it is lighter and absorbs more of the tasty sauce. Now stir it into the sauce and Enjoy with your pasta.

I topped it off with some Parmesan cheese.

mashed potatoes



i cant believe i have never really made mashed potatoes yet. But actually i dont remember if i have. But tonight i ate them with a guac-a-shrimp sandwich.

mashed potatoes is one of the least screw up able recipes on the planet.

Start by washing some potatoes (however much you fell you can eat) and chopping them into equal sized chunks. I like the size of dice sized.

Now throw the diced potatoes into a pot with a ton of cold water. give 1/2 inch of extra water over top of potatoes.

Now add a pinch of salt and turn temp high so it boils. Now Let it all boil using a lid, but be mindful it doesnt foam too much.

The potatoes will vary in cooking time length, but once you can put a fork through them very easily, like with no effort than you are set.

Now you drain the potatoes from water and are ready to add the flavouring.

So there are a few options but you need at least a dash of milk and then some fat. Fats can be
  • olive oil
  • butter
dont add TOO much, but then again i know people who do half potatoes half butter, though i do not suggest this.

You need a bit of flavour my favourites are
  • dash of salt (to taste)
  • oven baked garlic (i use toaster oven to save energy)
  • dash of maple syrup
  • dash of tobasco sauce
Now these flavourings are up to you, so play around with it. and mostly just enjoy!

avocado and shrimp sandwich



now i know it is not the right time for avocado but somehow they were selling them for really cheap at the little market i buy my food at.

I started by scooping out the inside of the avocados into a small bowl. I then
  • added juice of 1/2 lime
  • added 2 tsp of cilantro
  • added 2 tsp of creme fresh (sour cream) to make more creamy
now mush it all up with a fork so its nice and smooth.

finally mix in a handful of shrimp.

Now slop that onto a piece of toast or bread and ENJOY!!!
