tomato pasta




This pasta was made simply with a tomato based sauce.

The sauce was made by putting the following in a saucepan
  • olive oil
  • garlic
  • onion
heat till onion is transparent and soft

add
  • tomato paste
  • touch of water
  • salt/pepper
  • zucchini
  • prosciutto
while this is all going on i made some pasta in another pot. then drained it.

Add the pasta and a little more olive oil to the sauce before serving so that pasta absorbs sauce.

This recipe was super easy was made for my friend's carrot cake party. These ones i made later, but once you have made them than its super easy to pop them into the oven whenever you want some hot fresh cookies.

Okay so the dough is made by
creaming
  • 1/4 cup of butter
  • 1 cup of sugar
mix in
  • 1 egg
  • 2 tsp. baking powder
  • 2 tbsp. milk
  • 1/4 tsp of vanilla
than mix that in with
  • 2 cups of sifted flour
So i mixed that all up. Divided it into two. rolled one of them out in between two sheets of parchment paper.

Got it down 2 cm though that depends on what you want.

Finally the second piece, i added a lot of cocoa powder till it turned dark brown and than did the same thing as the other dough.

Put them on top of each other and roll them both up.

put into fridge for an hour.

Finally take them out, slice into 1/4 inch slices. Add a little bit of sugar on top and put into oven at 350.Cook till slightly brown on top. should be a couple min

breakfast for the hung over



So for breakfast this weekend, well i was kind of hung over and well i needed somethign kind of fatty, plus tasty with some veggies. So this is what i made.

It consisted of three different things. Eggs, Zucchini and the chicken patties i did the other day.

Okay, zucchini first, cause that takes a little bit of prep.
  • cut strips of zucchini
  • coat in flour and a touch of salt
  • heat oil till pretty hot
  • fry zucchini
  • add some salt
  • add side of lemon
The eggs were scrambled and well they had
  • chives
  • garlic
  • curry powder
  • sliced chili pepper
  • salt/pepper
This cured it...well that and a big cup of coffee and got right into, well im sure it was a productive day.

Pig belly...


okay though it sounds gross this is honestly one of the tastiest cuts of meat i have eaten. Imagine ribs without the bone and more fat. haha. well kind of. but i have seen a ton of it in the supermarkets and found a recipe to cook it up. I changed it a bit but the basics are the same. I need to try it again with some new alterations but this is what i did.

Oven at 420 F
  • sliced to the amount i wanted
  • scored the top
  • added salt to top (fatty part) making sure it got into cracks from score
  • added salt/pepper to bottom
Put on a roast rack and put in oven for 30 min.

after 30 min, turn down to 350 F cook for another hour. I also added some honey and mustard to the top to give a little more flavour.
  • Now, mine got a little crisp cause well i left mine in for longer at higher temp. but i think less time is better to get more juices to flow.

Okay so now that you have it cooked for an hour and half, cut up some
  • celery
  • garlic
  • onion
  • potato
  • salt/pepper
  • touch of thyme
take roast and roast rack off, and put all the above in with the fat that has dripped off and coat all the veggies with it. Put roast in the middle, and if top is already really crunchy than put tin foil on top so that it wont burn.

Cook it all for another 30-40 min. I changed pan and took roast off and cooked potatoes for longer to get a little more crisp. but be wary of them burning. Also might need to change pans because of too much oil.

Now this should be ready for enjoyment. Add some parsley to give a little green, but seriously it is so good.

chicken patties


these are a well a play on a few things. So i bought some ground chicken and made little patties out of it. They consisted of
  • ground chicken
  • rosemary
  • olive oil
  • egg yolk (if you want patties to hold together)
  • finely chopped garlic
  • finely chopped onion
  • salt/pepper
i made them into small paties and cooked them beside some sliced up zucchini to give some green. they were good but could work as burgers. or break it up and have with rice or pasta.

I ate these with some beets on the side.

bacon pasta



Todays meal was pretty simple. and if you cant tell i was craving bacon. and well im a sucker for cravings. Its really bad, but when you can make the exact meal your craving then well. its good. okay this wasnt the exact meal, but it was so tasty.

i fried some bacon up in one pan while boiling water in a pot.

i sliced up some chives and chili to give some flavor

once bacon was fried up, i took it out and let it sit on some news paper. keep on med heat.

i cooked up some pasta in the boiling water and then drained it.

threw everything into that had bacon. mix it up for couple sec

top with some parm.

pasta and veggies



pasta and veggies. Cheap and tasty, for a simple meal.

pasta was the same stuff as i made for lunch, but the sliced zuchinni was cooked up with
  • olive oil
  • rosemary
  • salt/pepper
to finish i added a little bit of honey/balsamic sauce i made the other day

had to run to class so i made this pasta up super quick.

the pasta was boiled and than i through it in a saucepan with
  • thinly sliced onion
  • salt/pepper
  • chili pepper
It was pretty great and just had some parm on top of that.

grape bread roll ups




so these were an alteration of the sweet bread cinnamon buns i made the other day. The recipe actually came from a grape bread recipe, but i did a major difference.

I made the dough the same, but when i rolled it out i cut them into circles and used those to roll up the grapes.

the grapes were sauced up with
  • olive oil
  • sugar
  • rosemary
than once rolled up i put a little of egg yolk on top to give a little shine.

rice balls...


so i saw these on iron chef and well tried to see if i could make some rice balls. They did not work out as i wanted but they tasted great. They were made with cooked and flavoured ground beef placed in the center of rice than balled together to try and make them stick. I definitely am going to try it again because they tasted great, but going to need work on how exactly to do them right.

So how did i do it? i firstly fried up the ground beef with
  • good amount curry powder
  • garlic (finely chopped)
  • onion (finely chopped)
  • touch of sugar syrup
  • touch of olive oil
  • salt/pepper
Now this i fried up together as you do with ground beef, and than had the rice, and tried to make a small bowl of rice in hand, than put ground beef and added more rice ontop. Again i gotta figure out a better way of doing it, but gotta say the ground beef was great.

bacon zucchini bites



Having a craving for bacon one afternoon i decided to make these bacon zucchini bites.

I firstly made the bacon in a fry pan.

i sliced the the zuchini and once the bacon was fried, i put them on the zucchini so some of the oil was absorbed by the the slices.

Than i fried the zucchini in the pan that i fried the bacon in so that i could absorb all the fat and tasty bacon taste.

i added some pepper and there was no need for salt because the bacon is so salty.

i ate that with some beets i made yesterday

i also had some rice on the side, and i gotta say it was a delicious lunch.

ribs and beets


So i have been told that i have only a few recipes and they are all using the same blasted ingredients. I'm sorry guys. This one is different, i swear.

Okay the ribs are not too different. Simply done in oven at some lowish temp, 150-200 C i think?

i gave them a rub of
  • black pepper
  • sugar syrup
and seared in saucepan quickly than put in oven. I kept coloring them, or well painting them with another sauce i made.

The sauce for them was made of
  • worchestershire sauce
  • garlic
  • onion
  • bbq sauce
  • sugar syrup
I cooked them slow till i could not wait anymore. Yes they take about 2-3 hours to do them right.

Okay now for the beets.

I did my classic recipe which is
  • put in tin foil
  • add salt/pepper/olive oil
  • wrap and put in oven at 350ish for 45 min
  • take out and let cool
  • cut them up
  • add a sauce

the sauce i used for these beets was made out of
  • orange juice, from an real orange
  • orange rind
  • mustard
  • sugar syrup
  • lemon juice
  • olive oil
i think that was it. Well i put that into a bottle shook it up and i was so happy.

cinnamon buns



So in the effort of making grape bread i actually changed my mind and decided to go with cinnamon buns. I dont think its an amazing recipe, but it works and tastes great.

So if you wanna make the dough:
  • add 25 g of dried yeast with
  • 3 tb of water
  • 1 tsp of sugar
let this sit for 5 min while you mix the other ingredients.

  • 2.5 cups of flour
  • .5 cup of sugar.
  • 4 tb of olive oil
  • salt
now add the yeast mixture and mix together. I added a little more water to make sure that it was not too dry. Knead for 5 minutes than let it sit.

let it sit for 2 hours in a warm place, with some sort of light covering.

once it rose, i used two pieces of parchment paper and put the dough between. I proceeded to use a wine bottle to thin out the dough till it was, well thin enough. i cant think of a reference, butw maybe 1-2 cm?

once it was all rolled thin i cut thin strips, and proceeded to coat the strips with
  • melted butter
  • sugar
  • cinnamon
i rolled these up and put them on a pan and coated the top of the pieces with the same mixture of butter sugar and cinnamon. than i put in oven at 350 for 15 ish min.

I decided to make a caramel for it, which consisted of
  • butter
  • sugar
  • cinnamon sugar
  • touch of milk
this i than dipped the cinnamon buns in, so that they were nicely glazed and tasted amazing.

rice with meatballs



I was really looking forward to having ribs today. To the point of me actually going to a couple stores to check it out. But alas, no luck. so i got some ground beef.

To make the meat balls, i got the ground beef and added
  • touch of sugar syrup
  • season with cajun spice
  • touch of cayenne pepper
  • garlic, finely chopped
  • onion, finely chopped
Finally you mix it all together and than roll them into small balls. I coated with a bit of flour, but not needed.

I added a little bit of oil to a pan and fried them up.

I had some rice that i made up quickly and also had a side salad with balsamic vinegar and olive oil.

Popcorn...my fav



so what else would i make at 2 oclock after going out? yes i know, early night for a friday, but after working in kitchen, it was a great night.

Popcorn is simple and easy
2 steps
  1. pop your popcorn in whatever fashion you want.
  2. than add something to make it even tastier
Ive made caramel popcorn, bacon popcorn, olive oil popcorn with garlic and stuff but when i am feeling lazy all i did was add
  • cajun spice
  • salt/pepper
  • olive oil
  • sugar syrup
it was pretty great. and gave my cravings everything they needed

I finally added green beans and scrambled eggs and mixed all together.

the final step, to make it fried rice, is the addition of rice.

breakfast pasta



So with some cooked pasta left over from last night i decided to make a breakfast pasta as i would know one to be. It involves, chorizo sausage, egg and well pasta.

I sliced up chorizo sausage and put it in a pan so the fat melted a bit and made the pan taste good. Then added the cooked pasta and fried it up in the chorizo fat.

  • i quickly boiled an egg,
  • making sure it was mid-soft boiled.
  • just a couple min.
  • I peeled egg
  • i then 'sliced' egg over pasta
top up with some parm cheese and enjoy!

So this was a super simple fried rice that i made with leftovers from the other day. The only thing i didnt have was chorizo sausage.

brianna and i decided to do a full toursty day at christiania than go back and make a dinner. So i made this good looking dinner. Sadly, though the vegetarian sides of this were simply delicious, the chicken did not work out that well and wasnt fully cooked. (though it looks good) but the sauce was still good.

put 2 cups of jasmin rice with 4 cups of water. Heat to med-high till boiling, than turn down and simmer. I added some curry powder, thats why it turned out nice and yellow. Cooked for 30ish min, till rice is done

So once again trying to get over this little cold i have been having i tried to make a spicy pasta with the stuff in the fridge.

as you can see i still have PASTA, green beans and corn from yesterdays soup.

soup for the sick


Im not exactly sure why, but sadly ive been feeling a little bit under the weather. And yes, i do know that my jewish heritage says i should make the famous matza ball soup. But for one reason or another, i am against them. Its not a comfort food for me, unlike a nice chicken soup that is either spicy, or has corn and chicken in it. As long as its not plain, i like to slurp it up.

so on this day
  • i came home
  • put on a big pot on the stove
  • started to cook
i started with
  • a few shallots chopped up
  • some olive oil
in pot at med heat. once softer fill pot with water

to this i added
  • a few carrots, chopped up coarsely. look at picture for reference
  • 1 chicken boullion
  • sliced green onion
  • cajun powder
  • salt/pepper
  • cayenne pepper
let it boil for 30ish min.

in another pan, just before eating i fried up
  • a can of corn
  • cajun spice
  • cayenne powder
i mixed those together and made myself a danish croustini.

Pasta...yet again



i know SO many bloody pasta recipes. Dont worry i will eat other things, but its just so cheap and good here. This was thanks to my room mate, simoni who actually made the pasta.

Therefore, for those out there that have pasta and want to make a delicious treat of a meal. This is what we do.

Grab some chicken breasts. Use bonesless, which is just easier. but skin, well thats your choice.

In a bowl add
  • cajun spice
  • cayenne pepper
  • olive oil
  • garlic. finely chopped
  • sugar syrup
  • salt/pepper
  • Chicken breast.
Put the breasts into a med- hot sauce pan once they have had some time to soak and get more tasty.

throw chicken breasts into pan, let it sear, than add sauce. and put lid ontop. give a couple min, than flip and cook other side. Hopefully you will get nice color and Not over-or under-cook the meat. Once cooked, slice.

The green beans i made by the usual manner i make green beans.

finally. add them all the stuff you have made in the saucepan the chicken was in and add some olive oil. cook for a minute on med-high and your good to go.

cake?



so this cake, well though it tasted great might be the most impossible cake to recreate. I realized quite quickly that making a cake with danish ingredients, or well ingredients with danish names is VERY difficult. I tried to use a simple coffee cake recipe, but most of them had sour cream additions or something. I also had no baking soda, or at least im pretty sure i only had baking powder. SO alas im not going to post the recipe, because it just was not worth it.

yet another pasta dish


So starving yet again i decided this time to use up some of the grapes i bought last week. I remeber from somewhere that grapes go decently with chicken and pesto so i decided to mix them all into a pasta. Its a great way of making an easy dish that has protein and looks good.

So the chicken was the most complicated.
I bought skinless breast. sadly. its frustrating trying to find the right meat here in denmark. oh well
the sauce i made with it was
  • olive oil
  • cajun spice
  • cayenne pepper
  • garlic
  • sugar syrup
i let it marinate for 10 minutes the put it into a saucepan with lid on. cooked till got a nice color and flipped. In my state, of studying i kind of over cooked it, BUT make sure you cook it through cause...well everyone is freaking out about undercooked chicken these days.

now while this was going on a put water on to boil for pasta and made a simple pasta. Once i drained the pasta, i put it back in pot and added some pesto,olive oil, salt and pepper.

finally i sliced some grapes to give a bit of freshness and well...to use them up

i put the pasta onto a plate/bowl, and than added grapes and added the chicken on top. and VOILA, a tasty pasta.

so wow. what a weekend

lunch with simon Schama, dinner with Charles Perry. Arguments with Barbara Kafka and a belly full of some of the most delectable food i have EVER eaten. So what do i eat once i return from such an experience?

PASTA: with some stuff that i left in the fridge for the weekend.

FIRST: zuchini
  • Slice into 1/2 inch disks
  • season with cajun spice, olive oil, salt/pepper
  • put in pan on med heat, with lid
  • flip and cook till cooked through

Second: green beans. once zuchini is cooked take pieces out band add

PUT WATER ON for pasta NOW

  • green beans to pan
  • a bit of water to slightly steam/boil beans
  • olive oil
  • garlic
  • cajun spice
  • sugar syrup
these are just like my other cooked beans. add zuchini once water is evaporated to keep it warm

  • now cook pasta till al dente
  • strain water
  • add olive oil
  • add green beans and zuchini

ribs in copenhagen



I was craving something that reminded me of home, so i bought some ribs and decided to see if i could make some pretty easily.

I started by
  • turning oven to 100 C
  • rubbing ribs with cajun spice, salt, pepper and a bit of sugar syrup
  • i than seared the ribs on both side in a hot pan
  • than i lay down a sheet of tin foil on a tray
  • put the ribs onto tray
  • put tin foil ontop and than put tray into oven
I let this cook while i made a BBQ sauce made up of
  • garlic
  • BBQ sauce
  • sugar syrup
  • olive oil
  • cajun spice
i cooked ribs by
  • 1 hour at 100 C
  • than turned them over
  • turned up temp to 150 C
  • kept turning over and painting the BBQ sauce on
  • should take another couple hours
i like mine a little over cooked, so they are crispy on the outside

the salad was simple
  • romaine lettuce
with a simple dressing of
  • lemon juice
  • garlic
  • mustard
  • olive oil
  • parmesan cheese

Tuna melts galore



After a long day of coffee and classes i was famished and decided to use up some of the tuna in my kitchen. I still had the goats cheese and the cheap bread. so i decided to make a tuna melt.
  • put the bread into oven to crisp up a bit
in a bowl, put the tuna and add
  • cajun seasoning
  • olive oil
  • a touch of garlic
  • touch of honey
Take out bread and devide tuna evenly between the two.

Now slice a bit of zuchini, (if you want to make it green)
  • make sure its thinner than mine. (mine wasnt cooked enough.)
put that on top of tuna. cook for 5 min

slice a bit of a cheese, and place ontop of zuchini and put back in oven

Take out once the cheese is melted and enjoy.

Danish Croustinis?


So i was really hungry the other night and only had this 60 c loaf of bread, garlic, goats cheese and some honey. So, i turned on my mini oven and decided to make this easy concoction.

  • Sliced bread put into oven till crispy
  • rub some garlic ontop of bread
  • add a touch of olive oil on bread
  • let cook for another couple minutes
  • layer the cheese ontop
  • take out once a little melted
  • take out and finalize with some honey drizzled on top

Green Beans


So i have been playing around with green beans a bit. Partially because i love to eat things with my hands, but mostly because they are somethig that almost any one can recognize. You can buy them in almost any grocery store and they are not too expensive.

There are a lot of ways to cook them, however i prefer to do a quick fry, semi-boil and than add some sauce to saute them with. This ends up with a tasty bean that can easily be picked up with your hands.

So this can all be done in 1. saucepan, which is so nice at college or in any house.

  • turn heat to high on a small pan with olive and garlic in bottom
  • fry garlic slightly, than add the beans
  • once they are just slightly seared add water, till halfway up beans
  • Let it boil off. and make your sauce
for my sauce i like a little sweetness but i have been playing with the recipe for a bit so i have a fw up my sleeves.

This time i made it with,
  • dash of soy sauce
  • sesame oil
  • lemon emon juice
  • a small dash of sugar syrup in denmark (maple syrup/brown sugar would work)
  • shallots/green onions
  • cayenne pepper
  • pepper/salt
mix this up with a fork and than poor over beans once they are boiled.

once the sauce has boiled off to a glaze your done and you can eat your beans.

Egg and noodles...not asian egg noodles



I'm so sure i have seen this before in a cookbook, or a restaurant. But cant remember the name. This was made after biking around copenhagen, which is where i am now situated. Biking down streets like this.



Okay but alas the recipe.

  • Put hot water on to boil pasta (make sure water is SALTY)
  • Cook Pasta
  • Add egg when pasta has around 4 minutes to go.
In a sauce pan add:
  • Olive Oil
  • crushed and chopped garlic
  • pepper
  • maple syrup/honey (i used this weird danish sweet stuff but dont know what it is)
  • put on med heat when you add egg
drain pasta and add to sauce pan

Cook, while peeling egg.

Plate than cut egg over pasta and let sit on top.

I can undercook my eggs, cause im in denmark but if your worried than cook it for longer.
