Have some left over mashed potato?


So this is one reason i make too much mashed potato, because you get to cook up up the next day for breakfast. I always make this at home, keeps me away from microwave and, it is soo much better, that i used to fend others off but than just started making it for everyone. Basically you put
  • mashed potato
  • olive oil
  • cheddar cheese
  • salami
  • salt/pepper
all in a saucepan, and put on medium till its nice and hot. You can also crisp the bottom by not mixing it too much, but be wary because it could burn.

I ate this as a study brunch with some toast and hummus.
