Lamingtons??


Lamingtons, the weird coconut covered desserts from Australia. Chocolate sauce, coconut, over a fluffy cake is just amazing. I tried to make them, though it went a rye and they became delectable 'corn bread cupcakes' with an orange chocolate sauce.



The corn bread cupcakes were made with:
3 eggs
1/2 cup sugar
3/4 cup self-raising flour, (flour with baking powder)
1/4 cup cornflour
15g (1/2oz) butter (better if melted)
3 tablespoons hot water

Basically, beat eggs until thick and creamy. Slowly add sugar. Continue beating until sugar completely dissolved.Fold in sifted flour and cornflour, then combined water and butter.

From here, i put the mixture into cupcake/muffin trays and put in oven at 350 till they were cooked through. This will happen when you can put a toothpick, fork or something and it comes out dry.

The chocolate sauce was made with
300g (1lb) icing sugar (1/2 of said amount)
1/3 cup cocoa (extra cocoa can be added, according to taste)
15g (1/2oz) butter
1/2 cup milk

1 tsp orange zest

Put in pot together, at low-medium temp. Put on the Cake.

I found out too late that i didnt have coconut, so i used Orange to add another flavour, also because i found out that coconut and orange taste great together.
